The journey begins with agave hearts slow-roasted for 22 hours in traditional brick ovens. Crushing occurs on Felipe’s specially designed, electrically-driven linear tahona. Fermentation happens naturally in open steel tanks (without fibers) using the cherished family yeast. The liquid is then double-distilled in small copper pot stills, retaining the flavorful heads while discarding the tails.

The magic unfolds over more than six years of patient aging in meticulously selected, old ex-bourbon barrels averaging over 20 years in age. This extended maturation in seasoned oak imparts profound complexity and deep amber hues.
